Instantly cooked dried pork tongue bamboo shoots 500g (for export)
Ingredients
Dried bamboo shoots 71.4%; water 26.0%; salt 2.0%; acidity regulator (INS330) 0.5%; preservative (INS211) 0.1%
Instructions for use
Remove water, wash, cut into large/small pieces as desired. Blanch in boiling water. Cook soup, hot pot or stew with pork ribs, goose, chicken, duck, bird... Use to prepare vegetarian dishes.
Dish 1: Bamboo shoots soup with stewed pork leg
Ingredients:
- Onion
- 500gr dried bamboo shoots
- Pig's trotters: 1
- Salt, fish sauce.
- Bones: 300gr.
How to make:
Step 1: Drain bamboo shoots, wash, cut into large/small pieces as desired. Blanch in boiling water
Step 2: Add 1 tablespoon of cooking oil to the pan and put it on the stove. When the oil boils, add the prepared bamboo shoots and stir-fry, season with a little salt and fish sauce.
Step 3: Wash the pig's feet and bones thoroughly. To remove the smell of the pig's feet, rub salt directly on them, then boil a pot of water and add the bones and pig's feet to boil. This will make the dirt and bad smell of the broth clearer.
Step 4: Remove the bones and nails, rinse with clean water, then put them in the pot, add water to the right portion and put on the stove to simmer. When the water boils, use a ladle to skim off the foam and pour it away. This will make the broth of the bamboo shoots and pig's feet soup clear.
Step 5: After simmering for half an hour, add the stir-fried bamboo shoots, stir well and simmer with the pig's feet and bones until everything is well-cooked. Finally, season to taste. Before eating, you can add green onions, coriander and a little pepper, which will enhance the delicious flavor of the dish.
Dish 2: Braised dried bamboo shoots with meat
Ingredients:
- Pork belly: 600g
- Shrimp shoots: 300g
- Dried onions: 2 bulbs
- Green onions: 3 stalks
- White wine: 5ml
- Carmine water: 5ml
- Sugar: 50g
- Light soy sauce: 30ml
- Salt
- Pepper.
How to make:
Step 1: Drain the bamboo shoots, wash them, cut them into large/small pieces as desired. Blanch them in boiling water
Step 2: Wash the pork belly, if you want to be more careful, you can boil a pot of boiling water and then put the meat in to blanch it, then take it out and rinse it with water. Cut the meat into small, bite-sized squares.
Step 3: Peel and crush the shallots. Peel and wash the ginger, crush it and stir-fry it. When the onions and ginger are fragrant, add the meat and stir-fry until it is firm. Continue to stir-fry until the meat is slightly dry and browned, then reduce the heat to low, add a little caramel, sugar, wine, and light soy sauce, and stir well to let the meat absorb the spices.
Step 4: Next, add boiling water to the pot, enough to cover the meat. Cover tightly and bring to a boil again, then reduce the heat to low and simmer for about 5 minutes.
Step 5: Pour all the bamboo shoots into the pot with the meat, season to taste. When the water boils, reduce the heat to low and simmer for another 30 minutes so that the meat and bamboo shoots are evenly seasoned. Cook until the meat turns dark brown, the water in the pot is almost gone, and the bamboo shoots are soft, then turn off the heat, sprinkle pepper and chopped green onions and you're done. Finally, scoop it into a bowl or small pot and enjoy.
